JOB SUMMARY
Lead Cook is responsible for ensuring the preparation and delivery of quality meals, managing kitchen
personnel, and maintaining a smooth operation in the kitchen, all while providing excellent service to guests.
ESSENTIAL DUTIES AND RESPONSIBILITIES

Lead and manage kitchen staff during assigned shifts, ensuring smooth operation of food production. Oversee
daily kitchen operations, including cooking, food preparation, and presentation.
 Prepare and cook menu items according to established recipes, ensuring food quality and
consistency.
 Monitor and maintain food safety and sanitation standards, including proper storage, handling, and
sanitation procedures.
 Assist with inventory management and ordering supplies, ensuring that stock levels are maintained,
and ingredients are fresh.
 Ensure kitchen is stocked with necessary supplies, including tools, equipment, and ingredients.
 Assist in the training and development of kitchen staff, providing guidance, feedback, and coaching.
 Assist in menu planning, recipe creation, and food costing.
 Maintain a positive working environment, promoting teamwork and communication among kitchen
staff.
 Ensure compliance with all applicable health and safety regulations.
 Manage food production during peak times, ensuring timely service and quality standards.
 Assist with special event catering or other food service needs as directed.
 Other duties as assigned by the Executive Chef.
EDUCATION AND EXPERIENCE
 Minimum of 3 years of experience in a commercial kitchen, with at least 1 year in a lead or
supervisory role.
 Culinary school diploma or equivalent preferred
 Ability to obtain and maintain any required health or food safety certifications.
 Prior experience in a high-volume kitchen or casino setting is a plus.
 Able to obtain and maintain a valid Kentucky gaming/racing license
PHYSICAL REQUIREMENTS & WORKING CONDITIONS
The employee is regularly required to stand, speak, hear, use hands, and reach with hands and arms. The employee may
occasionally be required to sit. Specific vision abilities include close and distance vision, color and depth perception, and
peripheral vision. The employee must occasionally lift and/or move up to ten (10) pounds. The work environment

When working in the office, the noise level is moderately quiet. When on the gaming floor, the noise level may be loud,
and the employee will possibly be exposed to cigarette smoke on the gaming floor.
