JOB SUMMARY
We have an exciting opportunity for a F&B Manager to join our Food & Beverage Team. The ideal candidate for this opportunity will lead by example and promote an environment of open communication and development for the team. Experience leading a team, maintaining inventory, optimizing back of house production, surpassing Health and Safety measures, working with suppliers, working on promotions and events, managing schedules, coaching and counseling, as well as maintaining exceptional service levels are highly desirable. ESSENTIAL DUTIES AND RESPONSIBILITIES
The Food & Beverage Manager is responsible for the successful operation of kitchen, restaurant, concession and bar outlets. The Manager is accountable for the storeroom, kitchen, restaurant and bar inventories by creating and maintaining a system to support the internal needs of the department to service internal and external guests. In addition, the Food & Beverage Manager will lead by example to cultivate a positive, inclusive culture that inspires creativity and drives innovative food and beverage strategies.
- Scheduling flexibility to match operational needs and oversight.
- Assists in the selection, training and development of staff and conducts performance evaluations.
- Delegate job tasks and responsibilities effectively and appropriately within the Food & Beverage Team while regularly reviewing staffing levels to maintain budgeted levels of employment.
- Ensure full compliance with Company and Departmental SOP’s, policies, procedures and service standards.
- Must be familiar with HACCP- Hazard Analysis & Critical Control Points and maintain full compliance with the Florida Department of Health.
- Respond to internal and external Health Inspection Audits to ensure continual improvement and safeguarding is achieved.
- Works closely with and reviews the inventory activities with the culinary and beverage Leaders.
- Standardize and uphold Food & Beverage product specifications, both recipes and preparation guidelines.
- Solicit bids on items from sources of supply to determine a reasonable price, acceptable pack size, available discounts, and transportation or handling charges using our purchasing support partners, both internal and external.
- Uses knowledge of purchasing methods and procedures including open market purchasing, formal contracting and negotiating techniques.
- Deals skillfully and tactfully with suppliers to ensure adequate and timely response to operational purchasing needs.
- Communicate effectively with suppliers regarding product specifications.
- Evaluates sample products of suppliers to determine conformance to product specifications and item requirements.
- Works and communicates with internal and external customers to meet their needs in a polite, courteous, professional and cooperative manner. Must be committed to quality customer service.
- Analyze data from all sources to make informed decisions on menu mix and trending offerings.
- Must be familiar with various means to source products for purchase.
- Ensures the safety and security of employees and customers. Supervises programs and processes to reduce and control loss time injuries.
- Reviews marketing, Food & Beverage activities and promotions with the Food & Beverage Senior Director.
- Assists with the development and management of the budget for the Food & Beverage department.
- Other duties as assigned.
REQUIRED SKILLS AND ABILITIES
- Leadership abilities demonstrated by effectively managing Food & Beverage Operations.
- Maintaining interpersonal working relationships among all personnel.
- Excellent oral and written communication skills.
- Experience and working knowledge in programs relating to the management of the department – such as: Ariba Purchase, Orca Inventory, Jolt Platforms, Oracle Simphony POS - Reporting and Analytics, Microsoft Office/Teams, SuccessFactors Payroll and Recruitment
- Willingness to assume overall responsibility relative to the performance of Food & Beverage operations.
- Must be trained and be able to perform all the requirements in Responsible Alcohol Service Chapter 561.705 of the Florida Statutes.
- Ability to work in a fast-paced environment and effectively communicate with guests, co-workers and management.
- Must be able to work a flexible schedule based on business needs which includes days, evenings, nights, weekends and holidays.
- Creative and innovative with Food and Beverage service offerings.
- High level of professionalism with the ability to react well under pressure.
- Adherence to Code of Conduct and all Calder Casino policies and procedures.
- Maintain and promote our business strategy.

- Ability to perform normal mathematical computations in regard to the implementation of current duties.
EDUCATION AND EXPERIENCE
- Two to five years’ experience in food and beverage operations and managing personnel; 4-year degree preferred in related fields or equivalent work experience.
- Ability to obtain and maintain: Florida State Gaming License, Food Protection Manager Certification, TIPS Certification
