JOB SUMMARY
Responsible for coordinating and managing all culinary performance in all venues.

Salary Range $100,000.00 to $110,000.00
ESSENTIAL DUTIES AND RESPONSIBILITIES
Executive Chefs complete a variety of creative, organizational and leadership tasks to ensure a kitchen runs optimally and provides excellent meal service to patrons.
- Establishes department standards, guidelines, and objectives, and maintains other administrative processes such as budget and staffing to ensure proper planning and efficient operation of assigned areas.
- Maintains confidentiality of all privileged information in accordance with established procedures with company policy and state regulations.
- Reviews activities in all reporting areas to gauge and improve staffing levels, working conditions and other matters which influence quality guest service and profitability.
- Reviews the work activities of subordinate employees to ensure that work is being performed within the standards established by management.
- Developing unique and cuisine-appropriate menus
- Staying current on developing trends in the restaurant industry
- Maintaining the kitchen and surrounding areas in conditions that meet the company standards and health code regulations.
- Hiring, training and supervising kitchen staff.
- Assisting and directing kitchen staff in meal preparation, creation, plating, and delivery.
- Identifying and introducing new culinary techniques
- Preparing meals and completing prep support as needed.
- Interacts with vendors on food specifications and pricing to ensure quality products for food outlets.
- Writes menus, recipes, and develops new concepts for restaurants and catering events.
- Monitors the food offerings for freshness, quality and consistency.
- Resolves problems that are within the position's scope of authority and recommends courses of action to resolve problems that are beyond the scope of authority to the position supervisor.
- Monitors the day-to-day activities of the department(s) as subject to established company policies.
- Keeps position supervisor informed of relevant activities.
- Other duties as assigned.
REQUIRED SKILLS AND ABILITIES
In addition to the other duties described herein, each Team Member has the following responsibilities related to compliance with laws and regulations.
- Attend required training sessions offered by the Company.
- Obtain and retain required license(s).
- Perform the duties described in compliance with local laws and regulations.
- Take the necessary steps to ensure minors are not allowed to gamble or loiter in gambling areas, drink alcoholic beverages, or purchase tobacco.
- Have knowledge of the ordinances, regulations, laws, policies, and procedures relating to the Team Member’s department.
- Have knowledge of the Property’s programs to address problem gaming.
- Report any acts of wrongdoing of which the Team Member may have knowledge.
EDUCATION AND EXPERIENCE
- Culinary Degree plus five (5) years of culinary experience, or equivalent experience; or a combination of education and experience may be considered.
- Experience as manager or supervisor in a high-volume complex hospitality environment strongly preferred.
- Must have excellent PC skills; Microsoft Office.
- Must be knowledgeable in all employment state and federal laws and regulations.
- Strong analytical, written, and oral communication skills.
- Must be able to formulate and communicate ideas and to make independent decisions.
Certificates, Licenses, and Registrations: Virginia Racing Commission License
Valid Driver’s License with a minimum of three (3) years driving experience.
